Chayote is like a cucumber. Or, maybe it's more like zucchini, but baked and stuffed, it resembles an avocado. It looks like a pear and when it's cooked with sugar and cinnamon, it has the flavor and texture of apples.
Chayote, known by many names worldwide (sometimes called mirliton and christophine in the United States), is a staple vegetable in Central and South America, as well as the Caribbean Islands. Chayote has a taste and texture between cucumber and zucchini and as many uses as both. It may also be prepared in the same way as all summer squashes. Chayote is available year round.
